Contest cooks up tasty treats

Fruit Week at the Manor featured a fruit-cooking contest. Seven entries vied for first place in the contest.

Judges Winnie Gatewood, resident, Sandy Truelove, Food Services supervisor, and Carol Acklin, certified nurse aide, tasted each of the delicious dishes. They had a hard time picking a favorite fruity treat.

After some discussion, they awarded third place to Glenda McDaniel, Activities assistant for her cherry cake roll. Second place was given to resident Rae Weast’s beautifully presented curried fruit. Angel cherry dessert made by Trusler Plaza Resident Edna Glaser received first place.

After the judging was completed, samples were served to the crowd of onlookers.

If you didn’t share your favorite recipe with us this time, don’t worry. You can start making plans for the Coconut/Pineapple Contest to be held Aug. 25.

Apple Enchilada Dessert, made by Linda Morgan, administrative assistant was the most requested recipe.

Here is Linda’s recipe:

  • 1 (21 ounce) can apple pie filling
  • 6 (8 inch) flour tortillas
  • 1 tsp. ground cinnamon
  • 1/3 c. margarine
  • 1/2 c. sugar
  • 1/2 c. brown sugar
  • 1/2 c. water

Preheat oven to 350 degrees. Spoon fruit evenly onto all tortillas, sprinkle with cinnamon. Roll up tortillas and place seam side down on lightly greased 8x8 baking pan.

Bring margarine, sugars and water to a boil in a medium sauce pan. Reduce heat and simmer, stirring constantly for 3 minutes.

Pour sauce evenly over tortillas and sprinkle with extra cinnamon on top if desired.

Bake in preheated oven for 20 minutes.

Note: May substitute apples with peaches or cherries, if desired.
